Over
the past three years the RSTA Culinary students have been involved in
the “Smoke This” East Cambridge Ribfest. In 2010 a group of our culinary
majors assisted several Cambridge restaurants in the competition. In
2011 our students entered the competition and through hard work and
determination they were awarded 4th place in the Peoples Choice Award,
pretty respectable since their competitors are professional chefs and
well established restaurants.
This year our students again entered their own ribs but this time
were awarded 3rd place in the judges category. This is a great
accomplishment considering the judges which included “James Beard Award”
winning Chef Tony Maws of Craigie On Main, the Phantom Gourmet’s Dave
Andleman, and Kenji Alt from Seriouseats.com. Not to mention the great
restaurants the students beat Area 4, Atwoods, Catalyst, Dante, East By
Northeast, Filarmonica Santo Antonio, Lord Hobo, Midwest Grill, New Deal
Fish Market, PF Changs, Portugalia, and Redbones to name a few.
The
students are very proud of there accomplishment and take this very
seriously, next year one of the instructors is going to build a smoker
to utilize in the program and for the competition next year.
